Today is our first REAL snow day. Everything is covered in white and the kids are thrilled!
I had oats soaking overnight with the intention of making oatmeal or our favorite oatmeal pancakes, but this morning with the excitement of snow I decided maybe we should have a more exciting breakfast.
And what is more exciting than getting to have cake for breakfast!? And it's not even anyone's birthday.
I loosely followed this recipe from Hillside Blessings. I say loosely because I had an unmeasured amount of oats and water soaking so I had to play with the other ingredients to get the right consistency. My batter had a lot more oats and a lot less flour than what is called for in the original recipe. I also omitted the sweetener since I knew we would be topping it was some sort of frosting. Next time I'll plan ahead and actually follow the recipe.
Either way, it turned out delicious! We used butter, milk, and a little powdered sugar for the frosting. We normally try to keep our sugar intake pretty minimal but some days call for a little something special. With the warm winter we are having I'd say snow is something special. Minus the frosting this is a breakfast I plan on adding to our rotation. It was as easy to whip up as our normal pancake recipe and as a bonus I didn't have to stand over the stove flipping pancakes.When they are in season, I think unsweetened whipped cream and berries would be the perfect topping for this "cake."
You should definitely give this recipe a try. It's delicious and super flexible!
